Le Chalet Gets its champagne straight from Epargne to the shop. We pride our relationship with the family of Autreau Lasnot who have been growing vines mainly on the same terroir : Venteuil since 1932. Firmly attached to the relief, the village of Venteuil dominates the heart of the Valley of the Marne vineyards. Composed of the three Champagne grape varieties: Chardonnay (white grapes), Pinot Noir and Pinot Meunier (black grapes), the vineyard is patiently looked after, not looking for productivity but more for the quality of the harvests in the respect of tradition. After the harvest, the elaboration of the Champagne means a lot of work : this is what we call ‘’la manipulation’’. Predominantly a mixture of wines, the choice of the vintages from different years and origins will combine their respective qualities and at the same time assure a certain regularity of taste from one year to the next. After the first alcoholic fermentation the wine is bottled and there will be a second fermentation called ‘’la prise de mousse’’ (sparkling fermentation), which gives all the originality to the Champagne. Next comes the ageing period during which the Champagne will acheive all its fullness. By riddling the bottles the natural sediments will reach the bottle-neck and will be ejected during the disgorgement. At last, the bottles corked for good, can be labelled and be ready for tasting.
